Making Fresh Milled Flour Simple!

Welcome to the brand spankin new blog where Lyndsie and I will talk all things fresh milled flour!

If you’re new to fresh milled flour (FMF), fresh milled wheat refers to whole wheat berries that are ground into flour immediately before use, rather than using pre-packaged flour that may have been milled weeks or months earlier.

The main benefits of fresh milled wheat come from preserving the nutrients in the wheat berry. Wheat has three parts: the bran (outer layer with fiber), the germ (nutrient-rich core with oils, vitamins, and minerals), and the endosperm (starchy interior). When wheat is milled, the oils in the germ begin to oxidize when exposed to air, which gradually degrades nutrients like vitamin E, B vitamins, and healthy fats. Fresh milling captures these nutrients at their peak.

A little about Lyndsie’s story:

I’m a mom of three living in the southern US (so far from Kelsey😭!). A few years ago, with the help of a friend, I changed my son’s diet to help him with some behaviors I found concerning. Within a month of switching to non processed, low glutamate, whole foods, he was doing so much better!

After about a year, I knew there had to be a way to incorporate bread back into our diet. I was doing research and discovered how beneficial fresh milled flour is – thanks to watching a Sue Becker video! I knew I had to give it a try.

A local mom milled me some flour, I tested it out on my son and he had no negative behavior changes! After that, I was all in. Now I make all of our bread products for our family. It can seem daunting, but with the right tools and routine, anyone can say goodbye to store bought bread and hello to healing, nutritious bread.

Start simple, start small, but just keep going! You CAN do it!

And a little about Kelsey:

I am a wife of 14 years to my high school sweetheart, mother of 3 beautiful children, and homestead in the Pacific Northwest.

We adopted baking with freshly milled flour (FMF) December 2023, and never looked back!

After 5 years of eating gluten free, due to sensitivities in our family, Lyndsie introduced me to FMF! I was so tired of the pre packaged GF recipes, the gummy and tasteless breads, all the different flours, and not truly enjoying baking anymore.

After years of thinking gluten was the culprit, I learned that gluten is not the enemy – flour that is stripped of it’s nutrients was the issue.

Now over 2 years later, we are still enjoying freshly milled flour baked goods, and it’s changed our health for the better!

I pray that FMF will change your view on wheat, gluten, and how baked goods can actually be GOOD for you!
